What is Hyderabadi Dum Biryani?

Hyderabadi Dum Biryani is one of the most celebrated biryani styles in the world, originating from the royal kitchens of Hyderabad in Southern India. It is prepared using the “dum” method — the word dum means “breath” in Persian — where marinated meat and partially cooked basmati rice are layered in a sealed heavy-bottomed pot and slow-cooked over a low flame.

The steam trapped inside does all the work. The rice finishes cooking in the moisture released by the meat, absorbing the flavours of the marinated chicken (or egg or vegetables), saffron, fried onions, fresh mint, ghee, and whole spices including cardamom, cloves, mace, star anise, and bay leaf.

The result is biryani where every single grain of rice is separate, perfectly cooked, and infused with deep flavour — completely different from stir-fried or pressure-cooked rice dishes.

What makes Hyderabadi biryani different from other biryanis?

Hyderabadi biryani uses a “kacchi” method (raw marinated meat) unlike Lucknowi biryani (which pre-cooks the meat). This gives it a more intense, deeply infused flavour. The spice profile is bolder, the saffron colour more vivid, and the overall experience richer. At Banana Leaf Grand in Niagara Falls, our Hyderabadi Dum Biryani is cooked in-house every day. No pre-made masala packets. No MSG. No reheating.
